Crust: 1 cup graham cracker crumbs, 1/4 cup sugar, 1/4 cup melted butter, press into 9” springform pan Filling: 2 packages cream cheese, softened; 1/2 cup sugar; 3 eggs; 1 teaspoon vanilla, beaten together until smooth. Pour filling into pan with crust. Put into preheated oven, immediately turn the oven down to 350. Bake 30-45 minutes, until a knife inserted into center comes out clean. (It may split - this is OK.) Leave oven going. Cool on rack for 15 minutes. While cooling, mix topping: Topping: 8 ounces sour cream, 1 teaspoon vanilla, 1/4 cup sugar. Stir until sugar is dissolved. When the timer goes off, spread the toping over the cheesecake, not quite to the edge. The topping will fill in any cracks. Bake at 350 degrees for 5 minutes. Remove from oven, cool on a rack. Refrigerate, covered with a paper towel and a plate (the paper towel absorbs any condensation and keeps it from dripping back onto the cheesecake).
