Whew!  Cookie Day!!! As suspected, this is a long video.  I take you through making my peanut butter cookies with lots of tips and anecdotal stories.  I actually cut out a lot and it’s still long!  

As mentioned, for the first time ever I’m sharing my recipe.  In return, I ask that everyone consider sharing one of their treasured recipes in the comments, and don’t forget tips and tricks!  My hope is we’ll have a virtual cookie exchange and spread some sweet crumbled memories with our stitchy friends!  Scroll through those comments!

Peanut Butter Cookies

1/2 Cup Shortening
1/2 Cup Butter (Softened Room Temp)
1 Cup Peanut Butter
1 Cup Sugar
1 Cup Brown Sugar Packed
2 Eggs
2 1/2 Cups Flour
1 tsp Baking Powder
1 1/2 tsp Baking Soda
1/2 tsp Salt

Cream shortening, butter, peanut butter, sugars and eggs together.  Sift flour, baking powder, soda and salt together, then mix into butter mixture slowly until blended.  Chill dough at least 1 hour, or overnight.

Preheat oven to 375 degrees.  Roll a heaping teaspoon of dough into balls about the size of a large walnut.  Place 3” apart on baking sheet.  Flatten slightly with fork dipped in flour in a cross-cross pattern.  Bake until set, about 8-10 minutes.
